Granola is so diverse. It gives you energy to make it through the morning, provides a filling snack in between meals, and makes dessert feel a little more nutritious when you sprinkle it over ice cream or use it as the crumble topping on a cobbler. There are lots of granola options on grocery store shelves, but as food blogger Jen Pantin of Lorimer Street Kitchen found out, most of them come filled with dehydrated blueberries and strawberries, and feel too summery, she says. So Jen set out to incorporate her favorite fall pumpkin spice flavoring and came up with this delicious concoction.
Here's how to make this layered pumpkin spice granola with pecans and cranberries:
Ingredients
4 cups rolled oats
1 cup pecans
¼ cup sunflower seeds (optional)
3 tablespoons pumpkin spice (recipe below)
½ cup olive oil (can substitute with vegetable or coconut oil)
½ cup honey (can substitute with agave nectar)
1 cup craisins
Pumpkin Spice
1/3 cup ground cinnamon
1 tablespoon ground ginger
1 tablespoon ground nutmeg
1½ teaspoons ground cloves
1½ teaspoons ground allspice
Instructions
1. Preheat oven to 350°.
2. In a bowl mix oats, pecans, sunflower seeds, and pumpkin spice. Mix thoroughly.
3. Add oil and honey and pour on to a foil-lined pan.
4. Bake for 25 minutes, stirring ingredients half way through.
5. Remove from oven and add craisins. Let cool and store in an air-tight container.
